Richard Liu is the proprietor of Ironwood Cider House, a Niagara-based destination that brings together craft cidermaking, design, and cultural experience. Under his direction, Ironwood has evolved into more than a cidery—it is a thoughtfully developed environment where agriculture, hospitality, and the arts intersect.
Since opening its new facility in 2021, Liu has guided Ironwood through a period of growth and refinement, shaping its identity around quality, authenticity, and experience. His approach to cidermaking reflects a deep respect for process: from carefully sourced apples to slow fermentation and blending techniques that emphasize balance, character, and nuance. Like a painter building layers on a canvas, Liu views cider as a medium—one that requires both precision and intuition.
This philosophy extends beyond production into the atmosphere of Ironwood itself. Liu has cultivated a space that values aesthetics and storytelling, where architecture, landscape, and programming work together to create a cohesive guest experience. The introduction of Atelier Ironwood reflects this vision—an intentional integration of contemporary art into the cidery, reinforcing the connection between craft beverage and creative practice.
At the core of Liu’s vision is the belief that cider, like art, is an expression of place and culture. Through ongoing collaborations, exhibitions, and curated experiences, he continues to position Ironwood as a cultural destination within Niagara—one that celebrates craftsmanship in all its forms.
“Atelier Ironwood is built on a pursuit of true craft. Whether in art, music, or culinary work, we’re drawn to things that are intentional and deeply considered. It reflects how we think at Ironwood, and the kind of work we believe in.”

Atelier Ironwood reflects the vision of Ironwood proprietor Richard Liu. Built around creativity and cultural exchange, Ironwood has developed as both a producer and a platform for artisan exploration. Atelier extends that worldview - through a curated program rooted in the same pursuit of craft.
Since opening its new facility in 2021, Ironwood Cider has developed with a clear focus on craft and cultural expression. The introduction of Atelier Ironwood marks a natural extension - expanding into a broader program of curated work rooted in that same pursuit of craft.
Ironwood Cider House is an estate cidery in Niagara-on-the-Lake focused on precise, site-driven cider. The work is guided by a simple premise: cider can be handled with the same level of intent and discipline as wine.
Production is based on Ontario-grown apples, selected for balance across acidity, aromatics, and tannin. Fermentation is managed according to style. The modern range is produced through controlled, low-temperature fermentations to retain clarity and definition. These ciders are direct, clean, and structured, built to express fruit without excess.
Alongside this, the artisan series follows a different path. Fermentations are wild, and élevage takes place over time in barrel and bottle. The aim is texture and structure rather than immediacy. Tannins are allowed to carry the palate, with minimal adjustment. These ciders develop slowly through years of ageing.
The range is presented through a series of tasting flights that reflect this approach. The Essential Flight introduces the modern expressions. Seasonal releases provide variation. The Artisan Flight focuses on barrel-aged and wild-fermented ciders. Private tastings are available for those who prefer a more detailed discussion of fermentation, blending, and aging.
Ironwood also operates Atelier Ironwood, a cultural program integrated into the estate. It brings together contemporary art, music, and culinary work in a manner consistent with the cidery’s approach — selective, measured, and considered. Cider, like art or cuisine, is treated as a material shaped over time. The experience remains quiet and deliberate, rooted in Niagara-on-the-Lake.
